Banana Cake Recipe

Ingredients
  • 113g | ½ Cup | 1 Stick Butter
  • 300g | 3 Cups Sugar
  • 2 Eggs
  • 1 Teaspoon Vanilla Essence
  • 3 Large Bananas
  • 250g | 2 Cups Flour
  • 1 Teaspoon Baking Soda
  • ½ Teaspoon Cinnamon
  • ½ Teaspoon Salt
  • 125ml | ½ Cup Milk
  • 1 Teaspoon Lemon Juice
  • 250g | 1 Cup Butter
  • 100g | ½ Cup Brown Sugar
  • ½ Teaspoon Cinnamon
  • ½ Teaspoon Vanilla Essence
  • 375g | 3 Cups Icing Sugar | Powdered Sugar | Confectioners Sugar
Instructions
  1. In a medium sized mixing bowl combine the butter and sugar.
  2. Add the eggs one at a time, beating in between each addition as well as the vanilla essence.
  3. Mash the bananas until smooth in a small bowl and add to the sugar mixture. Mix together until well combined.
  4. Stir together the milk and lemon juice and set to the side.
  5. Sieve in the dry ingredients.
  6. Pour in the milk mixture and fold together the cake batter.
  7. Pour into a greased cake tin and bake in a 180C | 350F oven for 50-60 minutes or until cooked through.
  8. Cool the cake in the tin for 5-10 minutes before transferring to a wire rack.
  9. To make the buttercream place the butter into the bowl of a stand mixer or a mixing bowl if you are using a hand mixer. Beat the butter for 4-5 minutes until light and fluffy.
  10. Add the brown sugar, cinnamon, and vanilla essence to the butter and beat to combine.
  11. Slowly add the icing sugar, scraping down the bowl a few times, until well combined.
  12. Spread the buttercream onto the cooled cake.
Notes
Make sure to use old bananas that are spotty. These are overripe, which means they are sweeter and stronger in flavour.
To make a layer cake double the cake recipe and bake in two cake tins. Spread the buttercream in between the cake layers and cover the outside.
